I've tried following guides on settings, placement, etc... but I can't seem to avoid this issue. I've watched streams of people using this where their voice is super clear, so I must be missing something.
Anyone understand how to set this up well?

I had this problem using a Blue Snowball mic and it turns out it was happening because my Elgato was picking up my voice chat through my headset and the mic. Had to get a Mixamp from Astro and mute the headset mic through the Mixamp.
Have you tried recording just your voice using some recording software?

PC.Gonna need some more details about your setup ie. Mic is in via USB, it's all set up as the primary mic for everything.
My headset is just headphones, there's no other mic to conflict with.
I'm recording using windows voice recorder atm, and it's not quite as pronounced by there's definitely some echo. It sounds like I'm using a low quality mic in am empty room almost.

Well in that case, I would go with what Mozendo said and make sure it is in Cardioid mode and not Stereo mode.PC.Mic is in via USB, it's all set up as the primary mic for everything.

Haha, I'm a dumb dumb... my web cam has a mic built in and it was defaulting to that for some reason... I must have crossed the streams at some point.
Switched it back and it's clear again!

Yep, I was setting up my stream recently and there were tones of little headaches like this. The mic sounds super crisp now though, well worth the money! I can have my fan on under my desk in the hot weather and it barely picks it up with the Cardioid mode.Well, there ya go lol glad you figured it out. It's been solved. It's on the desk but it's super clear now.Do you have the mic on a mic arm or straight on the desk?

I saw. Though I would still suggest getting a mic arm and shock mount to get the yeti off the desk and closer to your face. That'll enable you to turn the gain down and reduce ambient noise.It's been solved. It's on the desk but it's super clear now.

The mic gain is almost at 0 and it's picking up my voice perfectly with almost 0 background noise pick up (and I have my PC fans to an aggressive profile due to the summer heat, AND a desk fan underneath my desk for me).I saw. Though I would still suggest getting a mic arm and shock mount to get the yeti off the desk and closer to your face. That'll enable you to turn the gain down and reduce ambient noise.
The one thing that is happening now is keyboard sounds being picked up. When I use the mic actively I move it in front of my keyboard and I can be comfy while doing this, so I don't need an arm for the position... but would moving the mic off the desk itself reduce the pick up of keyboard sounds at all?

When I heard the recording I knew this was the problem. I think everyone does this at least once.

Getting it physically off the desk will definitely help. In that audio file your voice is clipping the audio. Basically your voice is too loud. This means you either run into the reds in whatever capture thing you use like OBS for example or your mic is calibrated wrong so that the audio clips even before it arrives at the capture software.
Try lowering the microphone volume/gain in your audio settings in window. (assuming you use windows)

It's a standard keyboard, not mechanical... but it is quite loud.Getting it physically off the desk will definitely help. Also what kind of switches does your keyboard use?

Also, remember the pattern of the cardiod and adjust your mic placement based on that. Reducing the gain and bringing it closer to you would also help.
I don't know if you will ever be able to erase the sound of the keyboard (im assuming it's a mechanical keyboard) without some other fancy stuff but these things should help.
